Recently the author of Treat and Trick posted a recipe for Naan on my Friday Feature. Although I had tasted this lovely bread at an Indian restaurant, I had no idea how easy it was to make. Traditionally it is served with soup or a dip, but we have begun making sandwiches with this slightly chewy bread. It is easy to whip up a batch and I have learned that if you double the yeast it rises in half the time. This morning I reduced the size of the naan by cutting it into eight pieces, instead of the normal four, and made fried egg sandwiches. They were a hit…and I am not sure where the naan craziness will end. My kids have taken to saying naan-naan-naan, instead of nam-nam-nam, which is their normal way of telling me that a food is tasty. Garlic Naan
- 1 tsp sugar
- 1 tsp instant yeast
- 3/4 tsp salt
- 2 cups all purpose flour
- 3/4 cup warm milk
- 2 tablespoon oil
- 2 tablespoon yogurt
- 3 cloves garlic minced or to taste
- butter for brushing
Combine dry ingredients – flour, salt, sugar, and yeast, in a medium size bowl. In another small bowl combine the wet ingredients – milk, oil, and yogurt. Create a well in the center of the dry mix and pour in wet mix. Stir until the mixture is well combined and then place dough on well floured surface. Knead for 10 minutes, adding flour as needed to reach a firm and elastic dough. Place in oiled bowl and cover with wet cloth or oiled plastic wrap. Allow to rise for about 60-70 minutes. Punch down and lightly knead garlic into dough. Cut into four equal parts and roll to about the thickness of pie crust. Heat cast iron skillet over medium. Place rolled dough in skillet, one at a time. Turn the dough in a circular fashion a few times as it cooks on one side – about 2-3 minutes. When brown flip to the other side and repeat.
Egg Naanwich
- 4 oz shredded cheddar cheese
- 1-2 tablespoons mayonaise
- 8 eggs
- oil to fry eggs
- salt and pepper
Follow above recipe but omit the garlic and cut the dough into eight equal pieces, after it his risen. Cook as described above. As the bread is cooking fry eggs in a separate skillet, with oil. To assemble – Divide cheese evenly among four of the naans. Spread the mayonnaise on the other four naans. Place two eggs on each of the naans with cheese and top with manonnaise naans. Serve warm.
